Ultimate Breakfast Porridge with Seeds & Seasonal Fruit

There’s nothing better than a warm bowl of porridge on a cold and miserable day. I have fond childhood memories of steaming bowls of porridge made with creamy sterilised milk, it truly set you up for the day. This recipe is several notches up when it comes to a bowl of porridge. Full of nuts, seeds and seasonal fresh fruit, it’s quite the bowlful. Obviously, this works with whatever seeds and fruits you have to hand, the spice mix and honey just takes it up another level. It’s a bit of an upgrade to my childhood bowl of porridge. I use almond milk for this recipe which offers a creamy flavour and consistency reminiscent of that sweet ‘steri’ milk.

Ultimate Breakfast Porridge with Seeds & Seasonal Fruit

Ingredients

Serves: 4 \ Prep: 10 minutes \ Cook: 10/15 minutes

  • 200g organic porridge oats.

  • 500ml almond or oat milk

  • Pinch of sea salt

  • 1 pink lady apple, grated

  • 2 fresh figs, thinly sliced

  • 1 banana thinly sliced (optional)

  • 1 tbsp mixed seeds: linseed, flaxseed, pumpkin seeds and chai seeds

  • 25g chopped mixed nuts, walnuts, hazelnuts, and almonds

  • 1 tbsp dried goji berries, chopped

  • drizzle of honey or maple syrup per serving

  • Spice mix

  • 1/4 tsp ground cinnamon powder

  • 1/2 tsp dark cocoa powder

  • 1/4 tsp ground cardamom


Method

Put the porridge oats, 400ml milk and the sea salt in a non-stick pan and warm gently on the hob. Keep stirring the porridge and as the milk is absorbed, add the final 100ml of milk. Simmer on a low heat for 10 minutes. You want it to be double cream consistency, pourable and not too thick. You may need to add a little more milk depending on the type of oats you use.

Turn off the heat and let it stand for a minute.

Have all your toppings ready to go. Put the spice mix in a little jar and mix thoroughly.

To serve, divide the porridge between the bowls and around the edge of the bowls, add some grated apple, sliced figs, nuts and seeds. Drizzle with a little honey or syrup and sprinkle over the a pinch of the spice mix.

Serve with a dollop of plant-based yoghurt or just as it is.
